Ingredients
Scale
For the Cream Cheese Filling:
- 1/2 cup low-fat cream cheese, softened
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
For the Quesadillas:
- 4 whole wheat tortillas
- 1 cup fresh blueberries
- 1 medium banana, sliced thin
- 2 teaspoons unsalted butter
- 1/4 cup granola for crunch (optional)
- powdered sugar for dusting (optional)
Instructions
- Prepare the Cream Cheese Filling: In a small bowl, mix the cream cheese, honey, cinnamon, and vanilla extract until smooth.
- Assemble the Quesadillas: Spread the cream cheese mixture evenly over two tortillas. Top with blueberries, banana slices, and granola if using. Place the remaining tortillas on top to form quesadillas.
- Cook the Quesadillas: Heat a nonstick skillet over medium heat and melt 1 teaspoon of butter. Cook each quesadilla for 2 to 3 minutes per side until golden brown and warmed through.
- Serve: Slice the quesadillas into wedges, dust lightly with powdered sugar if desired, and serve warm.
Notes
- For extra protein, consider adding a thin layer of peanut butter before the fruit.
- If using frozen blueberries, remember to thaw and pat them dry before assembling.
- Enhance the flavor with a drizzle of maple syrup or a dollop of Greek yogurt on the side.
