  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 cup whole milk

Additional:

  • 2 cups fresh or frozen blueberries
  • 1 tablespoon all-purpose flour (for coating blueberries)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease/flour a 9-inch round cake pan.
  2. Mix Dry Ingredients: Combine flour, baking powder, baking soda, and salt in a bowl.
  3. Cream Butter and Sugar: Beat butter and sugar until light and fluffy in a large bowl.
  4. Add Wet Ingredients: Beat in eggs and vanilla, then alternate adding dry ingredients and sour cream/yogurt, mixing well. Stir in milk.
  5. Combine Blueberries: Toss blueberries with flour and fold into batter.
  6. Bake: Pour batter into pan, bake for 50-60 minutes until a toothpick comes out clean.
  7. Cool and Serve: Cool in pan for 15 minutes, then transfer to a wire rack to cool.
