Main Oat Mixture:
- 1 cup rolled oats
- 1 cup milk of choice
- 1/2 cup Greek yogurt
- 1 large egg
- 3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Cheesecake Swirl:
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar or erythritol
- 1 teaspoon lemon zest
Additional:
- 1/2 cup fresh or frozen blueberries
Instructions
- Preheat & Prepare: Preheat oven to 350°F and lightly grease or line an 8×8-inch baking dish.
- Blend Oat Mixture: In a blender, combine oats, milk, yogurt, egg, maple syrup, vanilla, baking powder, and salt until smooth.
- Prepare Cheesecake Swirl: Mix softened cream cheese, powdered sugar, and lemon zest until smooth.
- Layer & Bake: Pour half of oat batter into dish, add spoonfuls of cream cheese mixture, sprinkle blueberries, pour remaining batter, and bake for 30-35 minutes.
- Cool & Serve: Let cool slightly before serving warm.
