- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Additional:
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mix the bran: Combine wheat bran and buttermilk in a large bowl; let sit for 5 minutes. Add maple syrup, oil, egg, and vanilla; mix well.
- Combine dry ingredients: In another bowl, mix flour, baking powder, baking soda, and salt. Add to wet mixture; stir gently. Fold in blueberries.
- Bake: Divide batter into muffin cups. Bake for 18-20 minutes until a toothpick comes out clean. Cool before serving.
Notes
- You can use frozen blueberries without thawing.
