Wet Ingredients:

  • 1/2 cup honey or maple syrup
  • 1/3 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Blueberry Filling:

  • 1 1/2 cups fresh or frozen blueberries
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, flour, baking soda, salt, and cinnamon.
  3. Whisk wet ingredients: In a separate bowl, whisk egg, honey/maple syrup, melted coconut oil, and vanilla until smooth.
  4. Combine ingredients: Mix wet and dry ingredients until fully incorporated. Reserve 3/4 cup of mixture for topping.
  5. Press mixture: Press remaining mixture into the pan to form a crust.
  6. Prepare blueberry filling: Toss blueberries with cornstarch and lemon juice. Spread over the crust.
  7. Add topping: Crumble reserved oat mixture over the blueberries.
  8. Bake: Bake for 30–35 minutes until golden and bubbly. Cool before slicing into bars.
