Wet Ingredients:
- 1/2 cup honey or maple syrup
- 1/3 cup coconut oil, melted
- 1 large egg
- 1 teaspoon vanilla extract
Blueberry Filling:
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice
Instructions
- Preheat the oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, flour, baking soda, salt, and cinnamon.
- Whisk wet ingredients: In a separate bowl, whisk egg, honey/maple syrup, melted coconut oil, and vanilla until smooth.
- Combine ingredients: Mix wet and dry ingredients until fully incorporated. Reserve 3/4 cup of mixture for topping.
- Press mixture: Press remaining mixture into the pan to form a crust.
- Prepare blueberry filling: Toss blueberries with cornstarch and lemon juice. Spread over the crust.
- Add topping: Crumble reserved oat mixture over the blueberries.
- Bake: Bake for 30–35 minutes until golden and bubbly. Cool before slicing into bars.
