Description

Delightful blueberry pancake bites perfect for breakfast or a snack, baked to golden perfection in a donut hole pan and bursting with fresh blueberries inside each bite.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons granulated sugar

Wet Ingredients

  • 1 large egg, beaten
  • ½ teaspoon vanilla extract
  • ½ cup milk
  • 2 tablespoons unsalted butter, melted

Other Ingredients

  • 40 blueberries (fresh or frozen)

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C) and generously grease a donut hole pan with nonstick cooking spray to ensure the pancake bites do not stick.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and granulated sugar until well combined to create a uniform dry mixture.
  3. Combine Wet Ingredients: In a separate bowl, whisk the beaten egg, vanilla extract, milk, and melted unsalted butter thoroughly until the mixture is smooth.
  4. Make Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix the batter to keep the pancake bites tender.
  5. Fill and Bake: Spoon the batter into the prepared donut hole pan, filling each cavity about two-thirds full. Press two blueberries into each filled cavity. Place the pan in the oven and bake for 12 minutes.
  6. Flip and Bake: After 12 minutes, carefully flip each pancake bite in the pan and bake for an additional 3 minutes or until they are golden brown and cooked through.
  7. Serve: Remove the pancake bites from the pan and serve warm. They are delicious on their own or topped with maple syrup, fruit preserves, glaze, or powdered sugar.

Notes

  • Use fresh or frozen blueberries according to availability; no need to thaw frozen blueberries before use.
  • Do not overmix the batter to avoid tough pancake bites.
  • Pressing two blueberries per cavity ensures every bite is flavorful.
  • Serve immediately for the best texture and flavor.
  • Can be stored in an airtight container and reheated in the oven or microwave.
