For the Bone Broth:

  • 2 pounds mixed beef or chicken bones (marrow bones, knuckle bones, or chicken carcass)
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, smashed
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 tablespoons apple cider vinegar
  • 12 cups cold filtered water
  • Salt to taste

Instructions

  1. Rinse the Bones: Rinse the bones under cold water. Optionally, roast them in a preheated oven at 400°F (200°C) for 30 minutes.
  2. Prepare the Broth: Place bones in a large stockpot. Add onion, carrots, celery, garlic, bay leaves, peppercorns, and apple cider vinegar. Cover with water.
  3. Simmer: Bring to a boil, then reduce heat and simmer uncovered for 12 to 24 hours, skimming impurities. Add water as needed.
  4. Strain and Season: Strain the broth, season with salt, and let cool. Store in jars in the refrigerator or freeze.
