For the Cake:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • ¼ cup whole milk
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Pastry Cream:

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Ganache:

  • ½ cup heavy cream
  • 4 ounces semi-sweet chocolate, chopped

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Prepare the Cake: Whisk together flour, baking powder, and salt. Beat eggs and sugar until thick. Heat milk and butter, then mix with vanilla. Combine wet and dry ingredients, then bake.
  3. Make the Pastry Cream: Heat milk, whisk sugar, yolks, and cornstarch, mix with hot milk, cook until thickened, remove from heat, add butter and vanilla, chill.
  4. Create the Ganache: Heat cream until simmering, pour over chocolate, let sit, then stir until smooth.
  5. Assemble the Cake: Slice cake, spread pastry cream, top with second layer, pour ganache over the top. Refrigerate before serving.

Notes

  • For easier slicing, chill the assembled cake for at least 1 hour.
  • The pastry cream and cake layers can be made a day in advance and assembled just before serving.
