For the Cake:

- 4 large eggs

For the Pastry Cream:
- 2 cups whole milk
- ½ cup granulated sugar
- 4 large egg yolks
- ¼ cup cornstarch
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
For the Ganache:
- ½ cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Prepare the Cake: Whisk together flour, baking powder, and salt. Beat eggs and sugar until thick. Heat milk and butter, then mix with vanilla. Combine wet and dry ingredients, then bake.
- Make the Pastry Cream: Heat milk, whisk sugar, yolks, and cornstarch, mix with hot milk, cook until thickened, remove from heat, add butter and vanilla, chill.
- Create the Ganache: Heat cream until simmering, pour over chocolate, let sit, then stir until smooth.
- Assemble the Cake: Slice cake, spread pastry cream, top with second layer, pour ganache over the top. Refrigerate before serving.
Notes
- For easier slicing, chill the assembled cake for at least 1 hour.
- The pastry cream and cake layers can be made a day in advance and assembled just before serving.
