Braised Baby Beets:

  • 1 pound baby beets, trimmed and scrubbed
  • 2 tablespoons olive oil
  • 1 small shallot, finely chopped
  • 1/2 cup vegetable or chicken broth
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Heat olive oil: In a skillet over medium heat, sauté shallot until softened, about 3 minutes.
  2. Add beets: Coat beets in oil and shallots. Pour in broth, balsamic vinegar, honey, salt, and pepper. Simmer covered until tender, 30-40 minutes. Stir occasionally.
  3. Reduce liquid: Uncover and cook for 5 minutes to thicken. Garnish with thyme before serving if desired.
