For the Burritos:

  • 4 large flour tortillas
  • 1/2 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup diced hash browns, cooked
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • Salsa and hot sauce for serving

Instructions

  1. Prepare the Eggs: In a medium bowl, whisk together eggs, milk, salt, and black pepper.
  2. Cook the Eggs: In a large skillet, melt butter over medium heat. Pour in the eggs and scramble gently until cooked through.
  3. Assemble the Burritos: Warm the flour tortillas. Divide the scrambled eggs, cooked sausage or bacon, cheese, hash browns, tomatoes, green onions, and cilantro among the tortillas. Roll up tightly.
