Wet Ingredients:
- 1/2 cup unsweetened applesauce
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter or almond butter
Mix-Ins (Optional):
- 1/2 cup raisins or dried cranberries
- 1/2 cup chopped nuts
- 1/2 cup mini chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Dough: In a large bowl, mix together the oats, flour, baking soda, salt, and cinnamon. In another bowl, whisk the applesauce, honey or maple syrup, melted coconut oil, eggs, vanilla, and nut butter. Combine wet and dry ingredients, then fold in any optional mix-ins.
- Bake the Cookies: Scoop 2-tablespoon portions of dough onto the baking sheet, flatten slightly, and bake for 10-12 minutes until golden. Cool on a wire rack.
