Instructions
- Prepare Tortillas: Spread 3-4 tablespoons of pizza sauce evenly over each whole wheat tortilla. Set aside to let the flavor meld while you prepare the eggs.

- Cook Egg Layer: Pour one-quarter of the egg mixture into the heated skillet, spreading it thinly and evenly to form a delicate omelet layer. Cook until the egg is mostly set but still slightly soft on the surface.
- Add Toppings: Spoon 3-4 tablespoons of pizza sauce over the cooked egg layer, then sprinkle 3-4 tablespoons of shredded mozzarella evenly on top to melt slightly.
- Add Tortilla: Gently place a prepared tortilla (with sauce side down) onto the egg and cheese layer, pressing lightly to adhere the tortilla to the toppings.
- Cook and Roll: Carefully swirl the tortilla in the skillet to ensure the egg finishes cooking and the tortilla sticks securely. Slide the tortilla onto a plate or cutting board, then flip it back into the skillet with the tortilla side down. Cook for another 30 seconds to seal and warm the tortilla.
