Instructions

  1. Prepare Tortillas: Spread 3-4 tablespoons of pizza sauce evenly over each whole wheat tortilla. Set aside to let the flavor meld while you prepare the eggs.
  2. Preheat Skillet: Heat a 10-inch nonstick skillet on medium-low heat. Add enough olive oil to lightly coat the bottom of the skillet to prevent sticking.
  3. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined and slightly frothy for fluffier texture.
  4. Cook Egg Layer: Pour one-quarter of the egg mixture into the heated skillet, spreading it thinly and evenly to form a delicate omelet layer. Cook until the egg is mostly set but still slightly soft on the surface.
  5. Add Toppings: Spoon 3-4 tablespoons of pizza sauce over the cooked egg layer, then sprinkle 3-4 tablespoons of shredded mozzarella evenly on top to melt slightly.
  6. Add Tortilla: Gently place a prepared tortilla (with sauce side down) onto the egg and cheese layer, pressing lightly to adhere the tortilla to the toppings.
  7. Cook and Roll: Carefully swirl the tortilla in the skillet to ensure the egg finishes cooking and the tortilla sticks securely.
