For the Quesadilla:
- 4 large flour tortillas
- 6 large eggs
- 1/4 cup whole milk
- 1 cup shredded cheddar cheese
- 1/2 cup cooked breakfast sausage or crumbled bacon
- 1/2 cup diced bell peppers
- 1/4 cup diced onion
- 2 tablespoons unsalted butter
- Salt and black pepper to taste

- Sour cream
- Chopped fresh cilantro
Instructions
- Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper.
- Sauté Veggies: Melt 1 tablespoon of butter in a large skillet. Sauté diced onion and bell peppers until softened.
