For the Quesadilla:

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or crumbled bacon
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste

For Serving:

  • Salsa
  • Sour cream
  • Chopped fresh cilantro

Instructions

  1. Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  2. Sauté Veggies: Melt 1 tablespoon of butter in a large skillet. Sauté diced onion and bell peppers until softened.
  3. Cook the Eggs: Pour in the egg mixture and cook until just set. Stir in the cooked sausage or bacon.
  4. Assemble the Quesadillas: Melt remaining butter in the skillet. Place tortilla, add cheese, egg mixture, more cheese, fold, and cook until golden brown.
  5. Serve: Slice quesadillas into wedges and serve warm with salsa, sour cream, and cilantro.
