Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 medium potato, peeled and diced
- 4 cups (1 liter) vegetable broth (or chicken broth)
- 1 large head of broccoli, chopped into florets
- ½ cup (120g) Stilton cheese, crumbled (adjust to taste)
- 1 cup (240ml) whole milk or cream (optional, for a creamier texture)
- Salt and pepper, to taste
- Fresh parsley or chives, for garnish (optional)
Instructions
- Prepare the Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing for about 5-7 minutes until the onion softens and becomes translucent.
- Add the Potato and Broccoli: Stir in the diced potato and cook for an additional 3-4 minutes, stirring occasionally to combine evenly.
- Add the Broccoli Florets: Add the chopped broccoli florets to the pot and stir well, mixing with the other vegetables.
- Simmer the Soup: Pour in the vegetable broth and bring the mixture to a boil. Then reduce the heat to low and let it simmer for 15-20 minutes, until the broccoli and potato are tender.
- Blend the Soup: Use an immersion blender to puree the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
- Add the Stilton Cheese: Return the blended soup to low heat. Stir in the crumbled Stilton cheese and continue to stir until the cheese melts into the hot soup, creating a rich, creamy texture. If the soup is too thick, add whole milk or cream to adjust the consistency.
- Season and Serve: Taste the soup and season with salt and freshly ground black pepper according to your preference.
- Garnish and Enjoy: Serve the hot soup garnished with fresh parsley or chives if desired for added flavor and color.
Notes
- You can use vegetable broth for a vegetarian version or chicken broth for a richer flavor.
- For a dairy-free option, omit the Stilton cheese and milk or substitute with a plant-based cheese and milk alternative.
- The soup can be reheated gently on the stovetop; add a splash of milk or broth if it thickens too much on standing.
- Adjust the amount of Stilton according to how strong you want the cheese flavor to be.
- The soup freezes well. Cool completely before freezing in an airtight container.
