Description

This comforting and cheesy Broccoli Rice Casserole is a perfect side dish for any occasion. Creamy with a crispy Ritz cracker topping, it’s a crowd-pleaser that’s easy to make.

Rice Mixture:

  • 2 cups cooked white rice
  • 4 cups fresh broccoli florets, chopped
  • 2 tablespoons unsalted butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Topping:

  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Sauté: In a skillet, melt the butter and sauté the onion until translucent. Add garlic and cook for 1 minute.
  3. Mix: In a bowl, combine rice, broccoli, sautéed onion and garlic, soup, sour cream, 1 1/2 cups cheese, salt, pepper, and paprika. Mix well.
  4. Layer: Spread the mixture in the baking dish, top with remaining cheese.
  5. Top: Mix crackers with melted butter, sprinkle over casserole.
  6. Bake: Bake for 25-30 minutes until bubbly and golden. Rest for 5 minutes before serving.

Notes

  • You can use frozen broccoli; thaw and drain well.
