  • 4 cups fresh broccoli florets (chopped small)

  • 1/4 cup roasted peanuts (chopped)
  • 1 tablespoon sesame seeds

For the Peanut Sauce:

  • 1/4 cup creamy peanut butter
  • 1 1/2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • 12 tablespoons warm water (to thin)

Instructions

  1. In a large bowl, combine the broccoli, carrots, bell pepper, green onions, and cilantro.
  2. In a separate small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, maple syrup, sesame oil, and garlic. Add water a little at a time until the sauce reaches a pourable consistency.

  3. Pour the sauce over the salad and toss well to coat.
  4. Sprinkle with chopped peanuts and sesame seeds before serving.

Notes

  • This salad can be served immediately but tastes even better after chilling for 30 minutes.
