For the Bulgogi Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons grated Asian pear (or apple)
  • 2 tablespoons finely chopped green onion
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon toasted sesame seeds
  • 1/4 teaspoon black pepper
  • 1 tablespoon water

Instructions

  1. In a medium mixing bowl, whisk together the soy sauce, brown sugar, sesame oil, and rice vinegar until the sugar dissolves.
  2. Stir in the grated pear, green onion, garlic, ginger, sesame seeds, and black pepper.
  3. Add 1 tablespoon of water to slightly thin the sauce if desired.
  4. Taste and adjust sweetness or saltiness to preference.
  5. Use immediately as a marinade for thinly sliced beef or as a dipping sauce, or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • For a spicier version, add 1 teaspoon of gochujang (Korean chili paste) or a pinch of red pepper flakes.
  • Asian pear gives the most authentic flavor and natural tenderizing effect, but apple can be substituted.
