Burrata Cheese:
- 8 ounces fresh burrata cheese
Tomato-Peach Jam:
- 2 large ripe tomatoes, chopped
- 1 large ripe peach, peeled and chopped
- 2 tablespoons granulated sugar
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Additional:
- 1 tablespoon fresh basil, chopped
- Crusty bread or crostini for serving
Instructions
- In a medium saucepan over medium heat, combine the chopped tomatoes, chopped peach, granulated sugar, honey, apple cider vinegar, lemon juice, salt, and black pepper.
- Remove from heat and let the jam cool to room temperature.
- Place the burrata on a serving plate and spoon the tomato-peach jam over the top.
- Sprinkle with chopped fresh basil.
- Serve immediately with crusty bread or crostini.
Bring to a simmer and cook, stirring occasionally, for about 15-20 minutes until the mixture thickens and the fruit breaks down.
