Description

This hearty and flavorful Burrito Skillet recipe is a quick and easy one-pan dinner that the whole family will love. Loaded with ground beef (or turkey), beans, rice, corn, and cheese, this Tex-Mex dish is a perfect weeknight meal.

Ground Beef Mixture:

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil (if using lean meat)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Additional Ingredients:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup frozen or canned corn
  • 1 (10-ounce) can diced tomatoes with green chilies (such as Rotel)
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • Optional toppings: sour cream, diced avocado, chopped cilantro, sliced green onions

Instructions

  1. Cook the Ground Beef Mixture: Heat a large skillet over medium heat, add olive oil if using lean meat, cook the ground beef and onion until browned and fully cooked, about 6–7 minutes. Drain excess fat if necessary. Stir in garlic and cook for 1 minute.
  2. Add Additional Ingredients: Add black beans, cooked rice, corn, diced tomatoes with green chilies, taco seasoning, and water. Stir to combine. Simmer for 5–7 minutes until heated through and slightly thickened.
  3. Finish and Serve: Sprinkle shredded cheese over the top, cover, and let sit for 2–3 minutes until cheese is melted. Serve hot with optional toppings.

Notes

  • You can use leftover rice or pre-cooked microwave rice for convenience.
  • Add jalapeños or hot sauce for extra heat, or wrap the mixture in tortillas for a quick burrito.
