Ground Beef Mixture:

  • 1 pound ground beef or ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base:

  • 1 (15-ounce) can mixed vegetables, drained
  • 1 (15-ounce) can diced tomatoes with juice
  • 1 (15-ounce) can kidney beans or black beans, drained and rinsed
  • 1 cup small pasta (like elbow macaroni or ditalini)
  • 4 cups beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon crushed red pepper flakes

Garnish:

  • Grated Parmesan cheese
  • Chopped parsley

Instructions

  1. Brown the Meat: In a large soup pot over medium heat, cook the ground beef until browned, about 5 to 6 minutes. Drain any excess fat.
  2. Sauté Onion and Garlic: Add the chopped onion and garlic to the pot, and sauté for 3 to 4 minutes until softened.
  3. Add Ingredients: Stir in the mixed vegetables, diced tomatoes, beans, broth, pasta, Italian seasoning, salt, pepper, and red pepper flakes if using.
  4. Simmer: Bring the soup to a boil, then reduce heat and simmer uncovered for 15 to 20 minutes, or until the pasta is tender.
  5. Adjust Seasoning and Serve: Taste the soup and adjust seasoning as needed. Serve hot, garnished with Parmesan and parsley if desired.
