  • 1 tablespoon olive oil
  • 1 pound smoked sausage (sliced into rounds)
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups green cabbage (chopped)
  • 3 medium carrots (sliced)
  • 2 celery stalks (sliced)
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil. Brown the sliced sausage on both sides for 5–6 minutes. Remove and set aside.
  2. Sauté vegetables: In the same pot, add diced onion, carrots, and celery. Sauté until softened. Stir in garlic and cook for 30 seconds.
  3. Add cabbage and sausage: Add chopped cabbage, return the sausage to the pot, then add diced tomatoes, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
  4. Simmer: Reduce heat and simmer uncovered for 25–30 minutes until vegetables are tender. Adjust seasoning, garnish with parsley, and serve.
