For the Cabbage Roll Skillet:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small head green cabbage, chopped (about 6 cups)
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- ½ cup uncooked white rice
- 1 cup beef broth or water
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- chopped fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Drain excess grease if needed. Add diced onion and garlic, cooking for 2–3 minutes until softened.
- Stir in chopped cabbage and cook for 5–7 minutes until it begins to wilt.
- Add diced tomatoes, tomato sauce, uncooked rice, broth, paprika, oregano, salt, and pepper. Stir to combine and bring the mixture to a simmer.
- Reduce heat to low, cover, and cook for 20–25 minutes, or until the rice is tender and the cabbage is fully cooked.
- Stir occasionally and add more broth if needed. Garnish with chopped parsley before serving, if desired.
Notes
- You can substitute brown rice, but increase the cooking time and liquid slightly.
- This dish reheats well and is great for meal prep.
- Add a splash of hot sauce or a sprinkle of cheese if you like extra flavor.
