For the Cabbage Roll Skillet:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small head green cabbage, chopped (about 6 cups)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • ½ cup uncooked white rice
  • 1 cup beef broth or water
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  2. Drain excess grease if needed. Add diced onion and garlic, cooking for 2–3 minutes until softened.
  3. Stir in chopped cabbage and cook for 5–7 minutes until it begins to wilt.
  4. Add diced tomatoes, tomato sauce, uncooked rice, broth, paprika, oregano, salt, and pepper. Stir to combine and bring the mixture to a simmer.
  5. Reduce heat to low, cover, and cook for 20–25 minutes, or until the rice is tender and the cabbage is fully cooked.
  6. Stir occasionally and add more broth if needed. Garnish with chopped parsley before serving, if desired.

Notes

  • You can substitute brown rice, but increase the cooking time and liquid slightly.
  • This dish reheats well and is great for meal prep.
