For the Cajun Chicken:

  • 1 pound boneless skinless chicken breasts, cut into strips
  • 2 tablespoons Cajun seasoning, divided
  • 2 tablespoons olive oil

For the Pasta:

  • 8 ounces fettuccine or penne pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the pasta: Prepare the pasta according to package directions; drain and set aside.
  2. Sear the chicken: Season the chicken strips with 1 tablespoon of Cajun seasoning. Sear in olive oil until browned and cooked through.
  3. Sauté veggies: In the same skillet, sauté bell peppers, onion, and garlic until tender.
  4. Make the sauce: Add cream, broth, butter, and Cajun seasoning. Simmer, then add Parmesan cheese.
  5. Combine and serve: Toss cooked pasta and chicken in the sauce until coated. Season with salt and pepper. Garnish with parsley.
