For the Cajun Chicken:
- 1 pound boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
For the Pasta:
- 12 ounces fettuccine or penne pasta
- Salt for pasta water
For the Sauce:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
For Garnish:
- Chopped fresh parsley
Instructions
- Cook the Pasta: Cook pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- Prepare the Chicken: Toss chicken strips with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, cook bell peppers until tender. Add garlic and cook until fragrant. Pour in heavy cream and chicken broth, then stir in Parmesan cheese. Return the chicken to the skillet and simmer until the sauce thickens slightly.
- Combine and Serve: Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper as needed. Garnish with chopped parsley and serve warm.
