Description

Creamy and flavorful, this Cajun Corn Chowder is a hearty soup perfect for cozy nights. Packed with vegetables and Cajun spices, it’s a satisfying dish that’s easy to make.

Ingredients

Scale

Vegetables:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

Other Ingredients:

  • 1 pound baby potatoes, diced
  • 4 cups corn kernels (fresh, frozen, or canned)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 4 green onions, sliced
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté Vegetables: In a large pot, melt butter and olive oil. Sauté onion, bell pepper, and celery until softened. Add garlic and cook until fragrant.
  2. Add Potatoes and Corn: Stir in potatoes, corn, and broth. Season with Cajun seasoning, paprika, cayenne, salt, and pepper. Simmer until potatoes are tender.
  3. Finish Soup: Stir in heavy cream, simmer to heat through. Adjust seasoning. Garnish with green onions and parsley.

Notes

  • For added protein, consider stirring in cooked crumbled bacon, smoked sausage, or diced cooked chicken.
  • To keep it vegetarian, use vegetable broth and skip the meat add-ins.
  • This chowder pairs well with warm crusty bread.
