Soup:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 red bell pepper (diced)
- 2 celery stalks (diced)
- 1 1/2 pounds Yukon Gold or Russet potatoes (peeled and diced)
- 1 teaspoon Cajun seasoning (or more to taste)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon thyme
- 4 cups low-sodium chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 1/2 cup shredded cheddar cheese (optional)
Garnish:
- Chopped green onions
- Cooked crumbled bacon
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add onion, garlic, bell pepper, and celery. Sauté for 5–7 minutes until softened.
- Stir in potatoes, Cajun seasoning, smoked paprika, salt, pepper, and thyme. Cook for 1–2 minutes to coat the vegetables in the spices.
- Pour in the broth and bring to a boil. Reduce heat to a simmer and cook uncovered for 15–20 minutes, or until the potatoes are fork-tender.
- Use a potato masher to mash some of the potatoes in the pot for a creamier texture, or blend part of the soup with an immersion blender.
- Stir in heavy cream and shredded cheese, if using. Simmer for 2–3 minutes until heated through and creamy.
- Serve hot, garnished with green onions, bacon, or extra cheese if desired.
Notes
- For a spicier kick, add extra Cajun seasoning or a dash of hot sauce.
- To make it vegetarian, use veggie broth and skip the bacon garnish.
