  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1/2 teaspoon salt
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons butter
  • 1/4 cup heavy cream (optional for extra creaminess)

Instructions

  1. Prepare the Grits: Bring water or broth to a boil in a saucepan. Stir in grits and salt, reduce heat to low, cover, and cook for 20–25 minutes, stirring occasionally, until thick and creamy. Stir in cheese, butter, and cream if using. Remove from heat and keep warm.
  2. Cook the Shrimp: Toss the shrimp with Cajun seasoning. Heat olive oil and butter in a skillet over medium-high heat. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Add garlic, sausage (if using), and lemon juice, and sauté for another minute until fragrant and heated through.
  3. Serve: Spoon creamy grits into bowls and top with the Cajun shrimp mixture. Garnish with chopped green onions and parsley if desired.
