Instructions
- Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, mayonnaise, sesame oil, sugar, and salt to make the dressing.
- Cucumber Salad: In a large bowl, combine the sliced cucumber, imitation crab, avocado, and sushi rice if using. Drizzle the dressing over the salad and toss gently to coat.
- Top with sesame seeds, green onion, and nori strips. Serve immediately for the freshest texture.
Notes
- For extra crunch, add julienned carrots or radish.
