- 1/4 cup brown sugar

- 1 cup diced apples
- 1/2 cup applesauce
- 1/2 cup half and half
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup Crisco Refined Coconut Oil, melted and cooled

Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan to prevent sticking.
- Combine dry ingredients: In a large mixing bowl, stir together the rolled oats, cinnamon, ground ginger, salt, and brown sugar until evenly combined.
- Add wet ingredients: Mix in the diced apples, applesauce, half and half, eggs, and vanilla extract to the dry mixture. Stir thoroughly to combine all ingredients well.
- Incorporate coconut oil: Pour in the melted and cooled coconut oil, stirring until the mixture is evenly blended and cohesive.
- Layer mixture and caramel: Spread half of the oatmeal mixture evenly in the bottom of the prepared baking pan. Pour caramel sauce over this layer, then cover with the remaining oatmeal mixture, spreading it evenly.
- Bake: Place the pan in the oven and bake for 30 minutes, or until the top turns a nice golden brown and the oatmeal is set.
- Cool and serve: Allow the baked oatmeal to cool for 5 minutes in the pan, then drizzle additional caramel sauce on top. Cut into squares and serve warm.

- You can use store-bought caramel sauce or make your own homemade caramel for best flavor.
- For a dairy-free option, substitute half and half with almond or oat milk and use a vegan caramel sauce.
