Ingredients for Caramel Apple Pie Cookies:
- 1 refrigerated pie crust (or homemade, enough for 1 crust)
- 3/4 cup apple pie filling (chopped into small pieces)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup caramel sauce (plus more for drizzling)
- 1 egg (beaten, for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
- Flour (for dusting)
Instructions
- Preheat Oven and Prepare: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly flour your surface and roll out the pie crust to about 1/8 inch thickness.
- Cut Out Circles: Use a round cookie cutter (about 2 1/2–3 inches) to cut out an even number of circles.
- Prepare Filling: In a small bowl, mix the chopped apple pie filling with cinnamon and nutmeg.
- Assemble Cookies: Place half of the dough circles on the prepared baking sheet. Spoon about 1 teaspoon of the apple mixture onto the center of each. Drizzle lightly with caramel sauce. Brush the edges with egg wash. Place the remaining dough circles on top and press the edges with a fork to seal.
- Bake: Brush the tops with egg wash and sprinkle with coarse sugar if using. Bake for 15–18 minutes until golden brown.
- Serve: Let cool slightly and drizzle with extra caramel before serving.
Notes
- You can use homemade pie crust and filling for a more from-scratch version.
