Overnight Oats Base

- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
Fruit & Toppings
- 1/4 cup chopped strawberries
- 1/4 cup chopped pineapple (fresh or canned, drained)
- 1 tablespoon chocolate chips or cocoa nibs
- Chopped nuts and extra fruit for topping (optional)
Instructions
- Caramelize the Bananas: In a small skillet, melt the coconut oil over medium heat. Add the banana slices and sprinkle with brown sugar. Cook each side for 2 to 3 minutes until the bananas turn golden and caramelized. Remove from heat and let them cool slightly before using.
- Prepare the Oats Mixture: In a jar or airtight container, combine rolled oats, milk, Greek yogurt, chia seeds, and vanilla extract. Stir thoroughly to blend all ingredients well. Add half of the caramelized banana slices into this mixture and mix gently.
- Add Fresh Fruit and Chocolate Chips: Layer the chopped strawberries, chopped pineapple, the remaining caramelized bananas, and chocolate chips on top of the oats mixture in the jar.
- Refrigerate Overnight: Cover the jar or container tightly and refrigerate it overnight or for at least 4 hours to allow the oats and chia seeds to absorb the liquids and soften.
- Serve and Enjoy: In the morning, stir the oats mixture to combine all layers. Optionally, warm it briefly in the microwave or enjoy it cold. Top with chopped nuts or extra fruit if desired for added texture and flavor.
