Description

Indulge in a delightful twist on classic French toast with these Caramelized Coconut Banana Bread Waffle French Toast. Crispy waffles made from slices of banana bread, topped with caramelized bananas, toasted coconut, and maple syrup, create a tropical breakfast or brunch treat.

Ingredients

Scale

Banana Bread Waffle:

  • 1 loaf banana bread (about 9x5 inches), cut into 1-inch slices
  • 3 large eggs
  • 1/2 cup coconut milk
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons brown sugar

Caramelized Bananas:

  • 2 tablespoons butter
  • 2 ripe bananas, sliced
  • 1/3 cup shredded sweetened coconut, toasted

For Serving:

  • Maple syrup

Instructions

  1. Preheat the Waffle Iron: Preheat a waffle iron and lightly grease with nonstick spray.
  2. Prepare Banana Bread Waffle Mixture: In a shallow bowl, whisk together the eggs, coconut milk, whole milk, vanilla, cinnamon, and brown sugar.
  3. Coat and Cook: Dip each slice of banana bread into the mixture, coating both sides. Place the coated slices into the waffle iron and cook for 3–4 minutes until golden and slightly crisp.
  4. Caramelize Bananas: In a skillet over medium heat, melt the butter. Add the sliced bananas and cook for 2–3 minutes per side until caramelized. Remove from heat.
  5. Serve: Top each banana bread waffle with caramelized bananas, toasted coconut, and a drizzle of maple syrup.

Notes

  • If your banana bread is very soft, let the slices sit out for a few hours or lightly toast them before dipping for better waffle results.
  • For a tropical twist, garnish with fresh pineapple chunks or a splash of rum with the caramelized bananas.
