Pasta and Onions

Chilli Oil

  • 23 teaspoons red pepper flakes (adjust to heat preference)
  • 1 garlic clove, smashed
  • 1/2 teaspoon smoked paprika (optional)
  • Pinch of salt

Instructions

  1. Make the Chilli Oil: In a small saucepan over low heat, gently warm the olive oil with red pepper flakes, smashed garlic, smoked paprika, and a pinch of salt. Allow the ingredients to infuse for 5–7 minutes, then remove from heat and discard the garlic. Set the infused oil aside.
  2. Caramelize the Onions: Heat 2 tablespoons of olive oil in a large skillet over medium-low heat. Add the thinly sliced onions along with sugar (if using), salt, and black pepper. Cook slowly for 20–25 minutes, stirring occasionally, until the onions are golden brown and caramelized. Stir in the butter during the last 5 minutes to add richness to the flavor.
  3. Cook the Pasta: While the onions are cooking, bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water.
  4. Assemble the Dish: Add the drained pasta directly to the skillet with the caramelized onions. Toss well to combine, gradually adding the reserved pasta water to achieve a silky, cohesive sauce. Drizzle the prepared chilli oil over the pasta to taste, then toss again to evenly distribute the flavors.
