Ingredients

Sourdough Bread:

4 slices

Unsalted Butter:

1 tablespoon, plus more for grilling

Yellow Onion:

1 large, thinly sliced

Olive Oil:

1 teaspoon

Sugar:

1/2 teaspoon

Ripe Pear:

1, thinly sliced

Brie Cheese:

4 oz, sliced (or sharp white cheddar)

Thyme Leaves:

1/4 teaspoon, fresh (optional)

Salt and Pepper:

Instructions

  1. Caramelize Onions: Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Add sliced onions, sugar, salt, and pepper. Slowly cook, stirring often, for 20–25 minutes until golden and caramelized. Set aside.
  2. Assemble Sandwich: Butter one side of each bread slice. Place two slices, buttered side down, on a clean surface. Layer with cheese, caramelized onions, pear slices, and thyme if using. Top with the remaining bread slices, buttered side up.
  3. Grill Sandwich: Heat a nonstick skillet over medium heat. Grill sandwiches for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted. Slice and serve warm.
