Cream Cheese Frosting:

  • 4 oz cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease or line an 8×8-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: In a large bowl, whisk together the oil, sugars, eggs, and vanilla until smooth.
  4. Blend the batter: Stir the dry ingredients into the wet mixture, then fold in carrots, pineapple, and nuts (if using).
