Cream Cheese Frosting:
- 4 oz cream cheese (softened)
- 2 tablespoons unsalted butter (softened)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F and grease or line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet ingredients: In a large bowl, whisk together the oil, sugars, eggs, and vanilla until smooth.
- Blend the batter: Stir the dry ingredients into the wet mixture, then fold in carrots, pineapple, and nuts (if using).
- Bake: Pour the batter into the pan, bake for 25–30 minutes until a toothpick comes out clean. Cool completely.
- Make frosting: Beat cream cheese and butter, add sugar and vanilla, beat until fluffy. Spread over cooled bars.
