Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Stir in mix-ins: Stir in the rolled oats, grated carrots, and nuts or raisins if using.
  5. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12-14 minutes until lightly golden around the edges but still soft in the center. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
