Cream Cheese Topping:

  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1–2 tablespoons milk, as needed

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Place the pie crust in a pie dish.
  2. Mix wet ingredients: Whisk together eggs, sugars, and oil. Add carrots, pineapple, and vanilla.
  3. Combine dry ingredients: Mix flour, spices, salt, and baking powder. Combine with wet mixture.
  4. Add nuts: Fold in nuts if using. Pour filling into crust.
