  • 2 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

For Serving:

  • 1 head butter lettuce or romaine (leaves separated)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden and fully cooked, about 6–8 minutes.
  2. Sauté Vegetables: Add garlic and ginger, cook for 1 minute. Stir in cashews, carrots, bell pepper, and green onions.
  3. Make the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Pour into the skillet and toss to combine.
  4. Finish: Cook for 2–3 minutes until vegetables are slightly tender and sauce is absorbed. Spoon mixture into lettuce leaves and serve.
