Description

This Cauliflower Jalapeño Popper Casserole is a delicious and creamy low-carb dish that combines the flavors of jalapeño poppers with the comfort of a casserole. Creamy cauliflower, spicy jalapeños, crispy bacon, and a cheesy topping make this a satisfying side dish or main course for a cozy dinner.

Ingredients

  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 45 slices cooked bacon (crumbled)
  • 23 jalapeños (seeded and diced)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Topping:

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pork rinds or breadcrumbs
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
  2. Cook Cauliflower: Boil cauliflower florets for 5–7 minutes until tender. Drain and set aside.
  3. Prepare Mixture: In a bowl, mix cream cheese, sour cream, cheddar cheese, Monterey Jack cheese, spices, salt, and pepper. Add jalapeños, bacon, and cauliflower.
  4. Assemble: Transfer mixture to baking dish.
