- 8 oz cream cheese (softened)
- 1/2 cup sour cream

- 4–5 slices cooked bacon (crumbled)
- 2–3 jalapeños (seeded and diced)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Topping:
- 1/4 cup grated Parmesan cheese
- 1/4 cup pork rinds or breadcrumbs
- 1 tablespoon butter (melted)
Instructions
- Preheat the Oven: Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
- Cook Cauliflower: Boil cauliflower florets for 5–7 minutes until tender. Drain and set aside.
- Prepare Mixture: In a bowl, mix cream cheese, sour cream, cheddar cheese, Monterey Jack cheese, spices, salt, and pepper. Add jalapeños, bacon, and cauliflower.
- Assemble: Transfer mixture to baking dish.
- Add Topping: Combine Parmesan, pork rinds/breadcrumbs, and butter. Sprinkle over casserole.
- Bake: Bake for 25–30 minutes until golden. Let cool for 5 minutes before serving.
