Cauliflower Steaks:

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Gremolata:

  • 1 cup hummus
  • zest of 1 lemon
  • 1/4 cup fresh parsley, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • extra olive oil for drizzling

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare cauliflower: Slice the cauliflower into 3/4-inch thick steaks and place on the baking sheet. Brush with olive oil, season with salt and pepper, then roast for 25-30 minutes.
  3. Make gremolata: Mix lemon zest, parsley, garlic, and lemon juice in a bowl.
  4. Serve: Spread hummus on plates, place cauliflower steaks, sprinkle with gremolata, and drizzle with olive oil.
