Marinade:

  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon Chinese Shaoxing wine (or dry sherry)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon five spice powder
  • 1/4 teaspoon white pepper
  • Red food coloring (optional, for traditional color)

Instructions

  1. Mix Marinade: Whisk together hoisin sauce, soy sauce, honey, brown sugar, Shaoxing wine, oyster sauce, sesame oil, garlic, five spice powder, white pepper, and red food coloring (if using).
  2. Marinate Chicken: Coat chicken thighs with marinade, cover, and refrigerate for at least 4 hours or overnight.
  3. Preheat Oven: Heat oven to 400°F (200°C), place a wire rack over a lined baking sheet.
  4. Roast Chicken: Arrange marinated chicken on the rack, roast for 25–30 minutes, turning and basting halfway through. Broil for a charred finish.
  5. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Serve with rice or noodles.
