  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese & Herbs:

  • 1 cup grated sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley

Wet Ingredients:

  • 1 1/4 cups buttermilk
  • 1/3 cup olive oil or melted butter
  • 1 large egg

For the Whipped Bovril Butter:

  • 1/2 cup unsalted butter, softened
  • 1 teaspoon Bovril beef extract
  • 1/2 teaspoon garlic powder
  • Pinch of black pepper

Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. Mix Dry Ingredients: Combine flour, baking powder, baking soda, salt, and pepper. Add cheeses, chives, and parsley.
  3. Combine Wet Ingredients: Whisk buttermilk, oil, and egg. Mix wet into dry ingredients gently.
  4. Bake: Divide batter into muffin cups and bake for 18-22 minutes until golden.
  5. Make Bovril Butter: Beat butter with Bovril, garlic powder, and pepper until fluffy.
  6. Serve: Enjoy warm muffins with a dollop of whipped Bovril butter.
