Cheese Sauce:

  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Garnish:

  • Chopped green onions or pickles for garnish (optional)

Instructions

  1. Main Soup: In a large soup pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat. Add onion, garlic, carrots, and celery. Sauté until vegetables soften. Stir in potatoes, broth, parsley, basil, salt, and pepper. Simmer until potatoes are tender.
  2. Cheese Sauce: In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes. Gradually whisk in milk until thickened. Stir into soup and simmer for 5 minutes. Add cheddar cheese and sour cream; stir until creamy.
