Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter, press into the pan, and bake for 8-10 minutes.
  3. Make the filling: Beat cream cheese and sugar, add eggs, vanilla, and sour cream, then pour over the crust.
  4. Bake: Bake for 30-35 minutes until set but slightly jiggly. Cool, refrigerate for 3 hours.
