  • 1 package refrigerated sugar cookie dough (16.5 oz)
  • Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • Fruity Swirl:

  • 1/4 cup fruit preserves or jam (strawberry, raspberry, or blueberry)
  • Garnish:

  • Fresh fruit for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease a 12-cup muffin tin or line with cupcake liners.
  2. Prepare cookie cups: Cut the sugar cookie dough into 12 equal pieces. Press each piece into the bottom and slightly up the sides of each muffin cup to form a cookie base.
  3. Make cheesecake filling: In a medium bowl, beat the cream cheese and sugar together until smooth. Add the egg and vanilla extract and mix until well combined.
  4. Fill the cups: Spoon about 1 tablespoon of the cheesecake filling into each cookie cup. Add about 1 teaspoon of fruit preserves on top of the filling and swirl gently with a toothpick.
  5. Bake: Bake for 15–18 minutes until set. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Chill for at least 1 hour.
