- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract

Instructions
- Preheat the oven: Preheat the oven to 350°F and lightly grease a 12-cup muffin tin or line with cupcake liners.
- Prepare cookie cups: Cut the sugar cookie dough into 12 equal pieces. Press each piece into the bottom and slightly up the sides of each muffin cup to form a cookie base.
- Make cheesecake filling: In a medium bowl, beat the cream cheese and sugar together until smooth. Add the egg and vanilla extract and mix until well combined.
- Fill the cups: Spoon about 1 tablespoon of the cheesecake filling into each cookie cup. Add about 1 teaspoon of fruit preserves on top of the filling and swirl gently with a toothpick.
- Bake: Bake for 15–18 minutes until set. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Chill for at least 1 hour.
- Serve: Top with whipped cream or fresh fruit before serving.
