Ingredients

Potatoes:

2 pounds russet potatoes (peeled and thinly sliced)

Cheese Sauce:

2 tablespoons unsalted butter, 1 small yellow onion (finely diced), 2 cloves garlic (minced), 2 tablespoons all-purpose flour, 1 1/2 cups whole milk, 1/2 cup heavy cream, 1 1/2 cups shredded sharp cheddar cheese, 1/2 cup shredded Gruyère cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon ground mustard (optional), chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté onion and garlic: In a medium saucepan, melt butter over medium heat. Add onion, cook until softened, then add garlic and cook briefly.
  3. Make the cheese sauce: Whisk in flour to form a roux. Gradually add milk and cream, stirring until thickened. Remove from heat and stir in cheeses, salt, pepper, and mustard.
  4. Layer potatoes and sauce: Arrange half of the potatoes in the baking dish, pour half of the cheese sauce, repeat with remaining potatoes and sauce.
  5. Bake: Cover with foil and bake for 45 minutes, then uncover and bake until golden and tender.
  6. Rest and serve: Let it rest for 10 minutes before serving. Garnish with parsley if desired.

  • Yukon Gold potatoes can be used for a creamier texture.
