Description

These Cheesy Baked Squash Rounds are a delicious and easy side dish featuring tender yellow squash slices coated in a flavorful mixture of breadcrumbs, Parmesan, and herbs, then topped with melted cheddar cheese. Baked to golden perfection, they offer a crispy, cheesy crust and tender interior that pairs beautifully with many meals.

Ingredients

Scale

Squash and Toppings

  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1 cup shredded cheddar cheese

Breadcrumb Coating

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Other

  • 2 tablespoons olive oil

Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Coating. In a medium-sized bowl, combine the breadcrumbs, grated Parmesan cheese, dried oregano, dried basil, salt, and pepper. Mix well to distribute all the seasonings evenly.
  3. Coat Squash. Brush both sides of each squash round with olive oil to help the coating stick and add moisture. Then, dredge each round in the breadcrumb mixture, pressing lightly to ensure it adheres well.
  4. Arrange & Top. Place the coated squash rounds on the prepared baking sheet in a single layer without overlapping. Sprinkle the shredded cheddar cheese evenly over the top of each round.
  5. Bake. Bake the squash rounds in the preheated oven for 20 to 25 minutes, or until the cheddar cheese is melted, bubbly, and golden brown, and the squash is tender.
  6. Serve. Remove from the oven and let the squash rounds rest for a few minutes before serving warm to allow the cheese to set slightly.

Notes

  • For a gluten-free version, substitute gluten-free breadcrumbs.
  • You can swap cheddar cheese with mozzarella or a cheese blend for a different flavor profile.
  • Try adding a pinch of red pepper flakes to the breadcrumb mixture for a spicy kick.
  • Ensure squash slices are uniform in thickness to promote even cooking.
  • Serve as a side dish or a tasty appetizer with a dipping sauce like ranch or marinara.
