- 1 cup mozzarella cheese, shredded
- 1/4 cup cream cheese, softened
- 1/2 teaspoon garlic powder

Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to get it ready for baking the rolls.
- Prepare the puff pastry: Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares to form the base for the rolls.
- Sauté the vegetables: In a medium skillet, heat a little oil and sauté the chopped spinach, mushrooms, bell peppers, and red onion over medium heat until tender, about 5-7 minutes. Remove from heat and allow to cool slightly.
- Mix filling: In a mixing bowl, combine the sautéed vegetables with shredded mozzarella, softened cream cheese, garlic powder, salt, and pepper. Stir until all ingredients are thoroughly incorporated.
- Fill the pastry: Spoon a portion of the vegetable and cheese mixture onto the center of each puff pastry square.
- Shape the rolls: Fold the corners of each pastry square over the filling, pinching the edges firmly to seal the rolls completely.
- Prepare for baking: Arrange the rolls on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil to enhance browning.
- Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the rolls are golden brown and the cheese inside is melted.
