Salsa:

  • 1 cup

Chili Powder:

  • 1 teaspoon

Cumin:

  • 1 teaspoon

Garlic Powder:

  • ½ teaspoon

Salt:

  • ½ teaspoon

Mexican Blend Cheese:

  • 2 cups shredded

Garnish:

  • Chopped cilantro and sliced green onions (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F.
  2. Cook Tortellini: Cook tortellini according to package directions, drain, and set aside.
  3. Cook Ground Beef: Brown ground beef in a skillet over medium heat, about 6-8 minutes. Drain excess grease.
  4. Combine Ingredients: Stir in enchilada sauce, black beans, corn, salsa, chili powder, cumin, garlic powder, and salt. Simmer for 5 minutes. Add cooked tortellini and 1 cup of cheese, then transfer to a baking dish.
