These Cheesy Chicken Fritters are a delicious and easy-to-make dish that can be served as an appetizer or a main course. Packed with flavor from mozzarella, Parmesan, and fresh herbs, these fritters are crispy on the outside and tender on the inside.

Chicken Fritters:
- 1 1/2 pounds boneless skinless chicken breasts, finely chopped
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour (or almond flour for low-carb)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- In a large bowl, combine: chopped chicken, eggs, mayonnaise, flour, mozzarella, Parmesan, garlic, parsley, salt, and pepper. Mix until well combined.
- Cover and refrigerate: for 20–30 minutes to allow the mixture to firm up.
- Heat olive oil: in a large nonstick skillet over medium heat. Scoop about 1/4 cup of mixture for each fritter and flatten slightly in the pan.
- Cook: for 3–4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Serve warm: with sour cream, ranch, or your favorite dipping sauce.
Notes
- For extra flavor, add chopped green onions or a pinch of paprika.
- These fritters can also be baked at 400°F for 18–20 minutes if you prefer a lighter version.
- Leftovers reheat well in a skillet or air fryer.
