Description

These Cheesy Chicken Fritters are a delicious and easy-to-make dish that can be served as an appetizer or a main course. Packed with flavor from mozzarella, Parmesan, and fresh herbs, these fritters are crispy on the outside and tender on the inside.

Chicken Fritters:

  • 1 1/2 pounds boneless skinless chicken breasts, finely chopped
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or almond flour for low-carb)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. In a large bowl, combine: chopped chicken, eggs, mayonnaise, flour, mozzarella, Parmesan, garlic, parsley, salt, and pepper. Mix until well combined.
  2. Cover and refrigerate: for 20–30 minutes to allow the mixture to firm up.
  3. Heat olive oil: in a large nonstick skillet over medium heat. Scoop about 1/4 cup of mixture for each fritter and flatten slightly in the pan.
  4. Cook: for 3–4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
  5. Serve warm: with sour cream, ranch, or your favorite dipping sauce.

Notes

  • For extra flavor, add chopped green onions or a pinch of paprika.
  • These fritters can also be baked at 400°F for 18–20 minutes if you prefer a lighter version.
